If you can’t find a hanger steak, use sirloin (remove the fat) or fillet instead.

INGREDIENTS 

  • ½ tsp Worcestershire sauce
  • ½ tsp Tabasco
  • 8 pitted green olives, roughly chopped, plus ¾ tbsp olive brine
  • 1 tsp sherry vinegar
  • 1 tsp white balsamic vinegar
  • 3 tbsp extra-virgin 
olive oil
  • ¼ small red onion, 
very finely sliced
  • 2 sticks celery, trimmed and very finely sliced (plus any leaves, roughly chopped)
  • 80g cherry tomatoes, halved
  • 2 tbsp roughly 
chopped parsley
  • ¾ tbsp grated horseradish
  • Good pinch of celery salt
  • Lemon juice, to taste
  • 1 x 250g hanger (also known as onglet) steak
  • Groundnut oil or beef dripping, for frying...
